Cheese production nudges higher in May |

Total cheese production in the United States in May was 828 million pounds, .5% above May of 2007 and 2.3% above April of this year. Italian cheese production for the month was 1.7 % below a year ago at 346 million pounds. American cheese output at 347 million pounds was 4.5% above May of last year.
Wisconsin total cheese production in May was 209.783 million pounds, up .7% from a year ago. The Badger State saw American production increase 5%, cheddar was 5.1% higher. Wisconsin Italian cheese output slipped 1% compared to a year ago.
California cheese output for the month dropped 8.1% % from a year ago to 179.569 million pounds. America cheese production in the Golden State fell 18.4%, cheddar plunged 21.6% compared to May of 2007. Italian cheese production in the state was down 4.1% from a year ago.
Butter production in May was 14 million pounds a 15.8% increase over a year ago. California churned out 48.24 million pounds, a 27.6% increase from May, 2007. Wisconsin butter production dropped 4.9% to 32 million pounds.
